Vanilla Chai Frozen Pudding Pops.
A frozen treat combining the flavors of chai with the creaminess of vanilla pudding all on a stick! Easy instructions and this recipe comes together in no time.
What could be better? How about a little extra protein with your treat? I have got you covered there too.
- 1 large box of Vanilla Instant Pudding
- 3 cups Milk
- 2 scoops Bob’s Red Mill Chai Nutritional Booster (pst…. $3 off coupon HERE)
- 1 recipe Copycat Magic shell
- 1 cup chocolate chips
- 2 tablespoons coconut oil
- Chia seeds for garnish
- 1 recipe Copycat Chocolate Magic Shell (optional but delicious!)
Vanilla Chai Frozen Pudding Pops
In a medium size bowl, combine the larger box of instant vanilla pudding mix with 2 scoops Bob’s Red Mill Chai Nutritional Booster .
For those of you who do not know, Bob’s Red Mill Nutritional Boosters is a plant-based protein at its finest. It is an excellent source of protein with 20g per serving and fiber. Additionally it has probiotics and pre-biotic fiber. Bonus point to Bob’s Red Mill for sweetening the nutritional booster with Monk fruit.
Whisk in the 3 cups of milk until thoroughly combined.
In addition to my Chai protein powder Bob’s Red Mill offers a vanilla and a chocolate nutritional booster.
I think either of these would also make delicious pudding pops, if chai is not the flavor for you! But I HIGHLY suggest the chai flavor profile.
Fill Popsicle Molds.
Fill popsicle molds to the fill line, leaving room for expansion as they freeze. Add the popsicle stick and freeze until firm. I left mine in the freezer for 4 hours. They might have been frozen before the four hours was up. But I forgot about them and that was the first time I checked.
- 2 Tablespoons coconut oil
- 1 cup chopped chocolate or chocolate chips
- Microwave the chocolate and the coconut oil for 30 seconds.
- Continue microwaving in 15 second increments, stirring between increments until melted and blended.
Pour the chocolate into a tall glass wide enough to accommodate the width of the frozen pudding pop. Dipping will be less messy and you will get even coverage.
Double Bonus Tip:
IMMEDIATELY sprinkle the chia seeds for garnish on the melted chocolate. The frozen pudding pop will set the chocolate coating quickly and once it is set, the chia seeds will NOT stick.
