Easy Apple, Cranberry, Walnut, Wild Rice Pilaf Recipe
My recipe for a flavorful and easy apple, cranberry, walnut wild rice pilaf is quick and easy thanks to Minute® Multi-Grain Medley. This pilaf is jeweled with dried cranberries, apples and walnuts. ‘Layers of flavors’ as I tell my children. Your holiday guest will ask for your recipe and your family will thank you each time you serve it.
Let’s get started with the list of ingredients:
- 2 bags Minute® Multi-Grain Medley
- 1 3/4 Cups Vegetable Stock (chicken stock is a good substitute)
- 1 Gala Apple
- 1/2 Onion
- 2 Tablespoons Butter
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Parsley
- Ground Pepper to taste
- 1/2 Teaspoon Italian Seasoning
- 1/2 Cup Dried Cranberries
- 1/2 Cup Chopped Walnuts
Let’s Get Started!
Chop your half onion into a fine dice.
Also dice your apple. Be sure to remove the core. I left the skin on the apple for the beautiful color and the added fiber. It is not much but I will take what I can get! If you want to peel your apple, you are welcome to do so.
Cook The Rice
In a medium pot combine the 2 bags Minute® Multi-Grain Medley (thanks for the pre-portioned connivence!), vegetable stock, salt, pepper, parsley and Italian Seasoning. Bring to a gentle boil and then cover with a lid. Drop the heat to medium low and allow to simmer for 10 minutes or until the stock is absorbed.
The stock is going to add another layer of flavor to this amazing recipe. I love layers of flavors!
Minute® Multi-Grain Medley is a blend of four gluten-free, 100% whole grains, all non-GMO, including long grain brown rice, Thai red rice, wild rice and the popular quinoa. If your kids are like they mine they dissect everything on their plate! My kids had fun trying to pick out the individual grains in this medley. Their grandmother is a fan of quinoa so they were sure she would love this recipe. I assured them she would.
In a wide bottomed pan, melt the butter and then saute the onion and apple until soft. This should take about four minutes. If you would like to add another layer of flavor, allow the onions to take on a bit of brown color.
Fold in the cooked Minute® Multi-Grain Medley to the apples and onions.
Sprinkle with the cranberries and walnuts and stir to combine. The nutty flavor of Minute® Multi-Grain Medley is enhanced by the walnuts that are added to this dish. I love when flavors are so complimentary!
