Easy Roasted Red Pepper, Walnut, Pomegranate Dip Recipe
An easy recipe for Roasted Red Pepper Dip that is sweet and tangy dip has the perfect hint of heat and is perfect served with carrot sticks, sweet pepper strips and pita chips. This Roasted Red Pepper Dip features walnuts and pomegranate seeds. Delicious spooned over chicken or shrimp.
I LOVE to have friends over for holiday parties but the party snacks can be packed full of fat and calories. I am one who will be mindlessly eating an entire bowl of mixed nuts while having a conversation and before I know I the ENTIRE bowl is GONE.

Roasted Red Pepper, Walnut, Pomegranate Dip Ingredients:
- ⅔ cup walnuts (I got mine in the bulk aisle of Giant)
- 1 (16 oz) jar roasted red pepper (or learn how to roast your own here)
- 1 lime
- 1 tsp minced garlic (or try roasted for a softer garlic flavor…. learn how to roast your own here)
- 1 tsp ground cumin
- ¼ tsp red chili flakes
- ½ cup pomegranate seeds
In a dry medium skillet, toast the walnuts on medium-high 2–3 min., until browned and fragrant, stirring occasionally. Set aside on a plate to cool.
I never liked walnuts until I had dry roasted walnuts. The heat pulls out the oils and they take on an entire other flavor. So delicious! Keep the walnuts moving in the pan so they don’t burn.
Drain the peppers and pat dry with paper towels. Do not skip the paper towel patting. It is important to get the extra moisture out. The dip can be to to runny if you don’t pat.
In a food processor, pulse the peppers, walnuts, juice of the lime, garlic, cumin, chili flakes, and ¼ cup pomegranate seeds until smooth. Season with salt (in moderation).
