Summer is knocking on our door and you know what that means!!
Fresh ingredients are coming from our gardens, the farmer’s market and in the produce section of your grocery store. Crips lettuces, cool cucumbers, flavorful tomatoes and pretty peppers are going to be full bounty. I could not be more excited!
I have spent the winter indoors, in the doldrums of the cold dreaming of bright summer days and lunches outdoors. Salad is one of my favorite ways to enjoy a fresh lunch and THIS is one of my favorite salad recipes.
I call it a Bacon Bleu Cheese Chop Salad but you are going to call it fresh and delicious!
- 1 bag chopped romaine hearts (or lettuces fresh from your garden if you are so lucky!)
- 1/4 cup chopped, crisp bacon (plus more for garnish)
- 1/2 sliced raw, red onion (more if you like but I am conservative on onion.)
- 6 Tablespoons Litehouse Chunky Bleu Cheese Dressing (or you could use Litehouse Homestyle Ranch…either are equally delicious)
- 1/4 cup diced cucumber (plus extra for garnish)
- 6-8 cherry tomatoes (for garnish)
- 1/4 ripe avocado (for Garnish)
Can we just take a pause and talk about Litehouse dressing?
First you will NOT find it in with your traditional shelf stable salad dressings in the center of your grocery store. Oh, no. You will find it in the cold case. Mine was in the case adjacent to the bagged salad mixes in my grocery store.
Because it is made with all FRESH ingredients. No preservatives. You need to add preservatives to a product if you are going to make it shelf stable. NO preservatives in Litehouse dressing. Just delicious, COLD dip.

This is dressing made the way YOU would make it if you had the time to chop, blend and stir to make a fabulous homemade, fresh dressing.
I know from my tasting expereince that this dressing is not only good in this salad but it make a PERFECT dip for crisp veggies. Cold crisp veggies cry out for a cold, thick dressing.
The procedure on making this salad is pretty simple.
Using a large bowl, empty the bag of romaine hearts, bacon, cucumber and Litehouse Chunky Bleu Cheese Dressing and slice and dice your salad. This is where the CHOP part of the salad comes into play.
Once you have chopped your ingredients and the dressing has coated all the lettuce leaves it is time to garnish. A garnish should reflect what is IN a dish. So I garnish with more crisp, shopped bacon, cucumbers and then I add grape tomatoes and sliced avocado.
