    Bacon onion tomato jam is the perfect addition to any charcuterie board. This recipe is the perfect combination of sweet and savory. A hint of thyme balances out the trio of flavors.     Bacon Jam Ingredients:

    • thick cut bacon. (you could use regular bacon but why, when thick cut is available!?)
    • Sweet White Onions (Vidalia Onions pictured)
    • Brown Sugar
    • Sun Dried Tomatoes, NOT the oil packed ones
    • Balsamic Vinegar
    • Small bundle of fresh thyme

    Bacon onion tomato jam

    Bacon onion jam instructions:

    1. Remove the skins from the onions and slice in medium thick slices. Don't slice them too thinly or they will 'melt' as they cook down.
    2. Slice the thick cut bacon into bite size pieces.
    3. Cook the bacon until it is crisp drain off all but a light coating of bacon grease.
    4. Reserve the extra bacon grease.
    5. Sauté the onions in the bacon fat.
    6. Once the onions have started to soften, add the thyme to the onions.
    7. Once the onions have reduced down, take on a lovely caramel, remove the stems of the thyme. This can take anywhere from 20 minutes to 45 minutes, depending on the moisture level of the onions and the pan temperature. Most of the thyme leaves will have fallen off the stems.
    8. Add the balsamic vinegar and deglaze the pan of all they yummy caramly bits of onions and bacon.
    9. Add the brown sugar, sun dried tomatoes, and bacon.
    10. Cook an additional 3-5 minutes until the bacon onion jam ingredients come together to a loose jam consistency.
    11. Remove from the heat.
    12. Allow to cool completely.

    You will see the bacon fat set up and turn while in the coolness of the refrigerator. That is not a problem. It will settle out once it come to room temperature.
