Cinnamon Sugar Salted Cashews
My family has been a fan of cashews for years! I am talking decades. I remember one Christmas my sister and I wanted to get our mom a gift with our own money. We saw a 2 pound box of cashews in the local candy store, yes we had a local candy store, and KNEW she HAD to have it for Christmas. We gathered our dimes, quarters and dollars from our savings and bought that twenty dollar box of cashews for our mother. You may not think twenty dollars is a lot for a gift for a parent but when you are six and eight years old and don’t get more than a dollar a week for allowance, it is a LOT of money. But that is what Christmas was all about for us at a young age. Giving gifts we knew were going to be loved by the ones we gave them too. We knew mom loved cashews so we wanted her to have the BIG box. Needless to say our mom loved the gift and shared them with us all.
These days my love for cashews has not wavered. In fact I think it has only increased with age. I love to dress up one of my favorite nut with a few extra ingredients and snack away.
Here is my recipe for Cinnamon Sugar Salted Cashews. If you say they taste like the cinnamon cashews you get at the amusement park, I would be alright with that. Enjoy!
- 2 cups salted cashews. (Whole are my preference but pieces and half are acceptable as well.)
- 1 egg white
- 1/4 cup sugar
- 1 teaspoon cinnamon
- *note* if using unsalted cashews 1/2 teaspoon of salt may be added.
Whisk the egg white until it is light and frothy. I did this by hand because it was just one egg white but a hand mixer with a whisk attachments will work as well.
Fold the beaten egg white and the salted cashews together.
Make sure they are coated evenly.
Combine the sugar and the cinnamon together and sprinkle over the egg white coated cashews. Stir to coat completely.
Spread evenly on a silpat lined baking sheet and bake at 250 for 1 hour. Every 15 minutes stir the cashews. Be sure to use a spatula to stir them so they are lifted fully from the baking sheet and not just pushed around.
Allow to cool completely and store in an air tight container.
