    M & M cookie bars are the easy cookie bar recipe you need when you want an easy dessert recipe with few ingredients. These chewy cookie bars have patriotic M&Ms, and chocolate chips and are made without a box of cake mix.

    I am adding this easy bar recipe to my list of cookie recipes that I make for the holidays. Speaking of the holidays, these would go well with any of the over 35 red white and blue mixed drinks and cocktails I have here on the website.

    ✨ Here is why this recipe is amazing:

    These chewy chocolate chip cookie bars are a great recipe to take to family gatherings and other parties.

    The recipe uses simple ingredients that are often pantry staples but you are able to make it your own by switching out the type of chocolate morsels.

    🍪 Ingredients needed:

    Here is a visual overview of the ingredients in the recipe. Scroll down to the recipe at the bottom for quantities.

    • 1 Cup Butter (softened)
    • 1 ½ Cup Brown Sugar (packed)
    • ½ Cup White Sugar
    • 2 tsp. Vanilla Extract
    • 3 Eggs
    • 3 Cups Flour
    • 1 teaspoon Baking Powder
    • 1 teaspoon Baking Soda
    • 1 teaspoon Salt
    • 2 Cups M&M’s
    • 2 Cups Chocolate Chips

    📝 Ingredient notes:

    Butter - Unsalted room temperature butter is used in this recipe. Unsalted butter is traditional in baked goods.

    Chocolate chips - semi-sweet chocolate chips are what are featured in this recipe but dark chocolate chips, butterscotch chips, milk chocolate chips, peanut butter chips or white chocolate chips can each be substituted. Switch out the chips next time you make this sweet treat!

    🔄 Substitutions

    This particular cookie bar has red white and blue colored M&Ms but they can easily be switched out for any color or color combination, depending on what you have in your pantry or what holiday or occasion you are celebrating.

    🥣 Helpful Kitchen Tools

    Parchment paper - helps with an easy clean-up but also helps the individual cookies lift from the pan.

    🔪 How to make cookie bars, basic instructions

    1. Preheat the oven to 350 and prepare your baking dish.
    2. Cream together the butter and sugars until light and fluffy.
    3. Add vanilla, eggs and the dry ingredients.
    4. Spread evenly in your prepared pan and bake 20-25 minutes until golden brown.
    5. Cool completely and cut into thick bars.

    1. Preheat your oven to 350
    2. Line a baking sheet with parchment paper and then butter the parchment and sides of the pan.
    3. In the bowl of a stand mixer add the butter and sugars.
    4. Mix with a paddle attachment until well blended and light and fluffy. Scrape down the sides of the bowl with a rubber spatula.
    5. Add in vanilla and eggs, and continue mixing until well incorporated.
    6. In a separate large mixing bowl combine flour, baking powder, baking soda, and salt, and whisk until well incorporated.
    7. Add dry ingredients gradually into the mixer, mixing after each addition.
    8. Add in chocolate chips and one cup of the M&M’s fold in until evenly mixed.
    9. Spread the dough evenly into your prepared pan being sure to extend the dough to the edges of the pan.
    10. Sprinkle 1 cup of M&M’s across the top of the cookie dough.
    11. Bake for 20-25 minutes or until golden brown. Baking time will vary depending on your oven and elevation.
    12. Allow to cool completely before cutting into 24 squares.
    13. Store in an airtight container.

    ❄️ Storage tips if you have leftover potato casserole

    Once you have cooled bars, store them in an air tight container.

    🍴Ways to serve these easy chocolate chip cookie bars:

    Perfect for the school bake sale! Just be sure to wrap in plastic wrap, aluminum foil or place in a plastic baggie before sending them to school.

    Serve with a scoop of vanilla ice cream.

    Drizzle with caramel and dollop on a scoop of homemade whipped cream.

    👩‍🍳 Chef Tip

    For an added layer of flavor, sprinkle the top of the dough with a sprinkle of flaky sea salt before baking.

    To get clean cuts on your bar cookies, dip your knife in hot water and wipe it dry before each cut.

    Ingredients
     

    • 1 Cup Butter (softened)

      2 tsp. Vanilla Extract, 3 Eggs
    • In a separate bowl combine flour, baking powder, baking soda, and salt, whisk until well incorporated.
      3 Cups Flour, 1 teaspoon Baking Powder, 1 teaspoon Baking Soda, 1 teaspoon Salt
    • Add dry ingredients gradually into the mixer, mixing after each addition.
    • Add in chocolate chips and one cup of the M&M’s fold in until evenly mixed.
    • Spread the dough evenly into your prepared pan.
