Crockpot Granola Bars That Are Vegan and Gluten Free!
Just when you thought there was not one more delicious recipe that you could make in the crockpot……BOOM! I give you Vegan, Gluten Free Granola Bars!
That is right! Granola bars made in the crockpot. No need to turn on your oven. Just plus in your slow cooker and let it do the work. These bars are crunchy on the outside and chewy in the center. The dates and moalsses give them the perfect balance of sweetness.
There is NOTHING like pure maple syrup. You can find this maple syrup in the Shoppe. It makes me want to go tap my maple trees. Then I remember how much work it is to get just an ounce of maple syrup from the sap. That thought snaps me back to reality and I just appreciate having it already in the bottle.
Start with your dry ingredients:
- 1 1/2 cups rolled oats
- 1/4 cup flax meal
- 1/4 cup shredded unsweetened coconut
- 2 T chia seeds
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 1/2 cup dried dates
Add the wet ingredients:
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 2 teaspoons vanilla extract
