This vegan granola will satisfy your chocolate sweet tooth with its chunks of dark chocolate and clusters of baked chocolate granola. When you stop by the Shoppe and enjoy your chocolate strawberry delight SOHO parfait you will be enjoying Death By Chocolate granola on your parfait.
But Death Chocolate is good in so much more than a parfait. How about mixing it in a chocolate muffin batter for the ultimate Death By Chocolate Peanut Butter Healthy Heart Muffins? The heart shape isn’t nessisary but with Valentine’s Day right around the corner we couldn’t resist a chocolate shaped heart!
1 MEDIUM/LARGE RIPE BANANA, PEELED
1 LARGE EGG
1/2 CUP CREAMY PEANUT BUTTER (I RECOMMEND USING NATURALLY NUTTY)
1/3 CUP UNSWEETENED COCOA POWDER
3 TABLESPOONS HONEY (USE LOCAL HONEY!)
1 TABLESPOON VANILLA EXTRACT
1/4 TEASPOON BAKING SODA
PINCH SALT, OPTIONAL AND TO TASTE
HEAPING 1/2 CUP DEATH BY CHOCOLATE GRANOLA + MORE FOR SPRINKLING MUFFIN TOPS
In a food processor grind up 1/2 cup of the Death By Chocolate Granola. A rolling pin and zip top bag can be used if you don’t have a food processor.
Grind the granola until it is a combination of fine powder and small pieces.
Add the rest of the ingredients to the food processor.
Tip: if you banana is less than over ripe, process it first until smooth and then add the rest of the ingredients.
Blend until it comes together as a thick batter. No not over mix. This is a thick batter and might challenge your food processor.
