From time to time I find avocados at a price that it is too good not to grab a dozen. But once I get them home my kids eat about 2 of them and then decide they no longer like avocados.
Who are these people and what have they done with my avocado loving children? Avocado was the first ‘real’ food that each of them ate when we were introducing them to solid food. They would wriggle their toes and reach out pudgy baby fingers wanting more avocado. Oh those were the days!
Mix It Up
With avocados looking at me from the countertop I decide it is time to mix up a pitcher of margaritas and make my fresh, home made guacamole.
Make sure the avocados have just a bit of give to them to ensure they are ripe. Too firm and the flavors haven’t developed enough. Too squishy and you might have a rotten avocado on your hands.
- 2 Ripe Avocados
- Juice of 1 Lime
- 1 Tablespoon Guacamole Spice Mix
- 1 clove fresh garlic minced (I grate mine on a microplane grater) *optional
Mash the avocados with a fork until they are a baby food consistancy.
Add the lime juice, guacamole spice mix and garlic and stir to combine.
Added tip: Use a hand immersion blender or a food processor to make the guacamole extra smooth.
Allow to rest in the refrigerator for at least an hour so that the flavors can get to know each other and bring out the best in each other.
A Bit Of Science:
The fresh lime juice helps keep the guac from oxidizing and turning brown. But for an added measure be sure to keep your guac covered with plastic wrap touching the surface until you are ready to serve.
