This keto alfredo sauce with cream cheese comes together in less than 15 minutes thanks to this recipe NOT having a roux as the base. The cream cheese acts as the thickener in place of the carb-heavy flour and fat roux.
This sauce is perfect if you have no carb and carb-loving people in the same family. One sauce can be made and served to everyone at the table.

Creamy, Garlic Alfredo Sauce That Is Also Low Carb or Keto
I love all things garlic so naturally, I love a garlicy Alfredo sauce. I do not suggest using raw garlic in this sauce, it is too strong. I suggest using roasted garlic, garlic confit or garlic powder in this recipe. Start with 1 clove or ¼ teaspoon and adjust your garlic flavor from there.
Flavoring this easy Alfredo Sauce
I graduated from Johnson & Wales University with my degree in International Baking & Pastry Arts and many of my friends were culinary students. They shared with me that the traditional Alfredo sauce has a bit of freshly grated nutmeg in it.
Not everyone is a fan of nutmeg so feel free to leave it out. I suggest you try it at least once because nutmeg does something magical to everything it touches.
I suggest seasoning your Keto Alfredo sauce with a touch of salt and pepper but what until just before serving it before adding it. Taste the sauce and adjust the seasonings. Parmesan has a great salty flavor so additional salt may not be needed.

- In a saucepan over medium heat, melt the butter and cream cheese heat whisking the ingredients together.
- If adding garlic, whisk in the garlic.
- Slowly add the heavy cream to the melted cream cheese, butter, and garlic. Ladling it in one ladle at a time, whisk and then repeat until ½ the cream is incorporated.
- Add the parmesan cheese, one handful at a time, fully incorporating before adding the next handful.
- Create a liaison of the cold egg, cream, cheese mixture by whisking in one ladle of hot sauce into the cold mixture. Repeat 3 more times.
- Now whisk the liaison back into the pan making a delicious Ketogenic Alfredo Alfredo sauce.
- Continue to whisk until the Alfredo sauce has thickened.

I am a HUGE fan of freshly grated parmesan cheese for this keto Alfredo recipe. The freshly grated cheese melts like a dream whereas the anti-clumping agents of the parmesan cheese in the green can give you a grainy sauce. We want a SMOOTH creamy sauce.
This recipe calls for 2 ounces of parmesan cheese. For me, that worked out to 2 cups of freshly grated, noncompressed shredded cheese.
I added egg yolks to this Alfredo sauce to help create an emulsion of the cream cheese, butter and cheese. It adds a bit of silkiness and helps keep the sauce from breaking, separating or becoming grainy in texture.
If you are making a big batch of low-carb Alfredo sauce you may want to freeze it for future use or as part of your weekly meal plan prep. Just be sure to cool the sauce completely before sealing it in an air-tight container. To avoid freezer burn be sure there is plastic on the surface of the sauce.
To reheat the sauce, slowly warm it in a saucepan, stirring constantly to keep the sauce from separating.
