The Full Scottish Breakfast
Nothing screams Scotland more than a full Scottish breakfast.
There are many variations of this meal depending on regional differences and personal preferences, but it typically includes:
1. Meaty Lorne Sausage / Square Sausage
Unlike the usual cylindrical sausages, the Lorne sausage is square-shaped and made of a mix of minced meat, breadcrumbs, and spices.
If you have excess Lorne sausages, feel free to use them in one of these recipes.
2. Black Pudding / Blood Sausage
A type of blood sausage, black pudding is a combination of pork blood, Scottish oats, and a blend of spices.
Not everyone's cup of tea, but it's considered a staple in Scotland.
3. White Pudding
White Pudding has a similar consistency to black pudding but is made without the blood so it has a lighter color. It's mostly oatmeal or barley, suet, and some seasoning, but some toss in pork meat or liver too.
4. Tattie Scones / Potato Scone
These potato flatbreads are made from potatoes, flour, and cheese, and they are either grilled or fried.
Slather on a generous helping of butter, and you've got a mouth-watering dish that's sure to be a hit with the kids!

5. Popular Scottish Sliced Haggis
Haggis contains sheep heart, liver, lungs, onions, oatmeal, suet, and spices, all encased in the sheep's stomach and boiled for a few hours.
The list of ingredients might put you off, but trust me, it's worth a bite.
6. Eggs
Breakfast isn’t breakfast without eggs. In Scotland, as in many places, you can fry, scramble, poach, or boil them, no problem.
7. Bacon
In a full Scottish breakfast, the bacon is often back bacon, which is meatier than the streaky bacon that is popular in the US. It's usually grilled or fried until crisp.
8. Flies' Graveyard / Fruit Slice
Flies' Graveyard might sound weird, but it's just a tasty pastry filled with currants and raisins (the 'flies'). It's a sweet and spicy treat big in Scotland and parts of the UK.

Baked beans are typically navy beans slow-cooked in a tomato-based sauce with various seasonings. Perfect comfort food to kickstart your day.
10. Grilled Tomatoes
Tomatoes are sliced in half and grilled to perfection. The process highlights their natural sweetness and gives them a slight smoky touch.
If you can’t use all your tomatoes, you may use them for pizza sauce or can them for later use.
11. Scottish Fruit Compote
Scottish Fruit Compote is a blend of Scotland's favorite seasonal fruits (strawberries, peaches, and blueberries) gently stewed together and served as a fruity topping for porridge, yogurt, or pancakes.
12. Grilled / Fried Mushrooms
Mushrooms are either grilled or fried until they achieve that perfectly golden-brown color. Simple but super delish!
13. Scottish Porridge Oat Pancakes
Using the traditional spurtle for stirring, porridge oats, flour, egg, and other ingredients are turned into a delightful pancake batter.
The result is a batch of delicious pancakes that are super filling and full of wholesome flavor.
14. Gluten-Free Scottish Skirlie
Skirlie is a traditional Scottish recipe made from oats and onions. This one, however, is gluten-free. Same great taste, but healthier.
