Caramelized Onion Dip with Crisp Bacon

Ingredients

  • 1 pound thick-cut bacon
  • 1 pound Onion (2-3 large onions)
  • 3 sprigs Thyme (Fresh)
  • 1 sprig Rosemary (fresh)
  • 2 Tablespoon Brown Sugar
  • 3 cloves garlic (minced)
  • 1 Tablespoon Worcestershire Sauce
  • 8 ounces Cream Cheese
  • ½ Cup Sour Cream
  • ½ Cup Mayonnaise
  • 8 ounces shredded cheddar cheese
  • 8 ounces shredded mozzarella cheese

Instructions
 

Cook the Bacon

  • In a large skillet, cook bacon until crisp. Remove to a paper towel-lined plate and crumble once cooled. Reserve about 2 tablespoons of the bacon fat for the next step.

Caramelize the Onions

  • Add sliced onions, thyme, and rosemary to the bacon fat. Cook over medium-low heat for 35–45 minutes, stirring occasionally, until the onions are deeply golden and soft. Remove herb sprigs before proceeding.

Add Garlic & Flavor

  • Stir in the brown sugar, minced garlic, and Worcestershire sauce. Cook for 2–3 minutes until fragrant and jammy.

Mix the Base

  • In a large bowl, stir together softened cream cheese, sour cream, and mayo until smooth. Fold in the shredded cheeses, caramelized onion mixture, and most of the crumbled bacon (save a little for topping).

Bake the Dip

  • Spread mixture into a greased baking dish. Top with reserved cheddar and bacon.

  • Bake at 375°F (190°C) for 20–25 minutes until hot, bubbly, and golden on top.

Serve

  • Serve hot with chips, crostini, or fresh veggies.
