Crab Corn Fritters

Makes 3 Fritters

Ingredients

  • 1 8.5 oz box Box corn bread mix (Jiffy used in this recipe)
  • 1 can (8-¾ oz. whole kernel corn, drained)
  • 1 Tablespoon Old Bay Seasoning
  • 2 Egg
  • ¼ Cup Sour Cream
  • 8 ounces crab meat (picked clean)
  • Oil for frying

Instructions
 

  • Preheat 2" of vegetable oil or a deep fryer to 350.
    Oil for frying
  • Blend the corn bread mix, flour, Old Bay seasoning.

  • Beat the egg and add it to the dry ingredients.
    2 Egg
  • Add to the tonic water and fold into the batter
  • Gently fold in the crab.
    8 ounces crab meat
  • Using a small cookie scoop, into deep fryer or skillet.
  • Cook 1 – 2minutes on both sides.
  • Drain on paper towel. Dust with additional old bay seasoning to serve.

Notes

How to reheat crab corn fritters.
On the off chance that you have leftover crab fritters, I have found the best way to reheat crab corn fritters is in an air fryer. Set the heat of your air fryer to 400 and reheat the crab corn fritters for 3-4 minutes. I would not recommend reheating crab corn fritters in the microwave. I find that microwaving them makes them too hard for my taste.
 
Do I have to use canned corn in crab corn fritters?
You do not have to use canned corn in this crab corn fritter recipe. The canned corn is just for convenience. Feel free to use corn freshly cut off of the cob or even freezer corn will work well. Follow my easy instructions on how to freeze corn.
