Crock Pot Cowboy Soup

Ingredients

  • 1 pound Ground Beef (browned and drained)
  • 2 Cups beef broth
  • 1 large Onion (yellow, diced)
  • 1 Green Bell Pepper (diced)
  • 1 15 ounce can kidney beans (drained)
  • 1 15 oz can black beans (drained)
  • 1 14.5 ounce can Diced Tomatoes
  • 1 15 ounce can corn (Drained)
  • 6 oz Tomato Paste
  • 1 tablespoon chili powder
  • 1 tablespoon liquid smoke (optional)
  • 1 Teaspoon Paprika
  • 1 Teaspoon Garlic (Minced)
  • 1 Teaspoon cumin
  • 1 Teaspoon Salt
  • 1 Teaspoon Black Pepper

Instructions
 

  • In a skillet, cook ground beef until browned. Drain excess grease.

  • Add beef, broth, onion, bell pepper, beans, tomatoes, corn, tomato paste, and seasonings into the slow cooker. Stir to combine.
    2 Cups beef broth, 1 large Onion, 1 Green Bell Pepper, 1 15 ounce can kidney beans, 1 15 oz can black beans, 1 14.5 ounce can Diced Tomatoes, 1 15 ounce can corn, 6 oz Tomato Paste, 1 tbsp chili powder, 1 tbsp liquid smoke, 1 Teaspoon Paprika, 1 Teaspoon Garlic, 1 Teaspoon cumin, 1 Teaspoon Salt, 1 Teaspoon Black Pepper
  • Cover and cook on high for 4 hours or low for 6 hours.

  • Stir, taste, adjust seasonings if needed, and serve hot with cornbread, rolls, or tortilla chips.

Notes

Ingredient Swaps:
Ground Beef: Ground turkey, chicken, or sausage work too.
Beans: Pinto or navy beans can replace kidney or black beans.
Corn: Frozen corn or canned Mexi-corn add variety.
Broth: Swap beef broth with chicken or vegetable broth.
Spices: Smoked paprika or chipotle powder adds extra depth if you skip liquid smoke.
