Cucumber Onion Salad

Ingredients

  • 2 (2) cucumbers (sliced thin)
  • 1 (1) Red Onion ( sliced thin)
  • 1 Cup (255 Gram) white vinegar
  • ½ Cup (100 Gram) Sugar
  • ½ Cup (118.29 Gram) Water
  • 2 Tablespoon (2 Tablespoon) dill (fresh, chopped fine )

Instructions
 

Prepare the cucumbers

  • Peel the cucumbers if desierd. Thinly slice the cucumbers
    2 cucumbers

Prepare the dressing

  • In a small pot over high heat whisk together the vinegar, water, and sugar until the sugar is fully dissolved and the mixture is clear
    1 Cup white vinegar, ½ Cup Water, ½ Cup Sugar

Toss the salad

  • Allow the dressing to cool and pour over the cucumbers and onions and toss to combine.
    2 cucumbers, 1 Red Onion
  • Sprinkle on the fresh dill and toss to incorporate.
    2 Tablespoon dill
  • Cover and refrigerate for about an hour to allow flavors to combine.
  • Serve cold or at room temperature and enjoy!

Notes

Why are English cucumbers used in this recipe?
Also known as burpless cucumbers, European cucumbers or hothouse cucumbers, these cukes are perfect for making salads because of their thin skin, mild yet sweet flavor and are believed to be easier to digest. Keep an eye out for the shrink-wrapped, long thin cucumber. That is what you are looking for. But if English cucumbers are not available in your area, use your favorite cucumber for this recipe.
