Notes
Why are English cucumbers used in this recipe? Also known as burpless cucumbers, European cucumbers or hothouse cucumbers, these cukes are perfect for making salads because of their thin skin, mild yet sweet flavor and are believed to be easier to digest. Keep an eye out for the shrink-wrapped, long thin cucumber. That is what you are looking for. But if English cucumbers are not available in your area, use your favorite cucumber for this recipe.
