Ingredients

  • 4 beets fresh and washed
  • 1 Teaspoon Lemon Juice fresh

Instructions

  1. Start by washing the beets and removing the stems, saving the stems and leaves to make sautéed beet greens.
  2. If the beet is too large to pass through the feeder tube of the juicer, slice the beet into pieces to fit.
  3. Turn on the juicer to high and using the plunger, press the beets through the juicer, catching the juice in a pitcher as it is extracted.
  4. Add a teaspoon of fresh lemon juice to the beet juice to help minimize oxidation.

Notes

How to make beet juice without a juicer

  1. Wash, peel and remove the leaves and stems from the fresh beets.
  2. Using a box grater, grate the beet to shreds.
  3. In a food processor or blender, pulse the shredded beets and 1 teaspoon fresh lemon juice until smooth.
  4. To strain the beet juice, press the puree through a fine mesh strainer or two layers of cheesecloth.
