In a small pan, bring water to a simmer and whisk in sugar until completely dissolved.
3 Cups Water, ¼ Cup Sugar
Remove from heat and allow to cool.
Stir in fresh lemon juice until fully incorporated. (add lemon zest if using)
½ Cup Lemon Juice, Optional: lemon zest
Carefully pour the mixture into the popsicle mold, place lid over the molds and insert the wooden sticks.
Freeze for 8 hours or overnight.
Notes
