One of my favorite no-bake treats is this scotcheroos recipe. Ready in less than 30 minutes they are addictively delicious and a definite crowd pleaser. Perfect for freezing and cookie exchanges.
In a medium saucepan, over medium heat, stirring together the corn syrup and sugar. Stir frequently, until sugar dissolves and mixture just begins to simmer. Do not over boil.
Remove from heat. Stir in peanut butter, incorporate completely.
Add crips rice cereal. Stir until well coated.
Spray a 9x13 pan with cooking spray. Press scotcherros mixture into the pan. Set aside.
Microwave the chocolate and butterscotch chips together stirring occasionally.
Spread evenly over cereal mixture. Let stand until firm. Cut into bars when cool.
Pro tip: Coat the measuring cup with cooking spray before measuring the corn syrup. The syrup will pour easily out of the cup.
