Slammin' Delicious Bacon Jam Recipe with Bourbon and Coffee

This bacon jam recipe is not only savory but it has a touch of sweetness and a hint of thyme, bourbon and espresso!

Ingredients 

  • 1 lb Bacon
  • 2 shallots ½ cup
  • 2 gloves garlic
  • 1 Tablespoon fresh thyme
  • 1 Tablespoon bourbon
  • 3 Tablespoon Honey
  • 2 T Butter
  • 1 Teaspoon olive oil

Method 

  1. In a heavy bottom or cast iron pan, crisp the bacon.
    1 lb Bacon
  2. Remove the crisp bacon to a plate and cook the shallot, garlic and thyme in the hot bacon grease.
    2 shallots, 2 gloves garlic, 1 Tablespoon fresh thyme
  3. Add the crisp bacon, the sautéed shallots, garlic and thyme to a blender.
  4. Add the bourbon, honey, butter, olive oil and bacon fat to the blender. (omit butter for Paleo)
    1 Tablespoon bourbon, 3 Tablespoon Honey, 2 T Butter, 1 Teaspoon olive oil
  5. Pulse to chop the bacon jam.
  6. Taste for seasoning and adjust with salt and pepper.
