In a heavy bottom or cast iron pan, crisp the bacon.
1 lb Bacon
Remove the crisp bacon to a plate and cook the shallot, garlic and thyme in the hot bacon grease.
2 shallots, 2 gloves garlic, 1 Tablespoon fresh thyme
Add the crisp bacon, the sautéed shallots, garlic and thyme to a blender.
Add the bourbon, honey, butter, olive oil and bacon fat to the blender. (omit butter for Paleo)
1 Tablespoon bourbon, 3 Tablespoon Honey, 2 T Butter, 1 Teaspoon olive oil
Pulse to chop the bacon jam.
Taste for seasoning and adjust with salt and pepper.
