Set your sous vide to 172ºF/77.8ºC.
Using a emersion blender stick, food processor, or blender blend together the eggs, cottage cheese, gruyere cheese and salt until smooth and lump free.

Grease the bottom and sides of the canning jars with a thin layer of the reserved bacon fat. Pan spray can be used if bacon fat is not available.

Finely crumble the bacon and place ½ a strip of crumbled bacon in each jar.

Pour the egg mixture over the bacon and fill to the bottom of the the rings on the jar.
Wipe the top of the jar and place on a lid and finger tighten a ring onto the jar.
Cook in the sous vide for 1 hour
