These homemade sous vide egg bites are similar to the Starbucks sous vide bites. Made in mason jars, these breakfast bites are easily transportable for a protein packed breakfast on the go. Make egg bites as part of your weekly meal prep.

Ingredients

  • 6 Egg
  • ¼ Cup Cottage Cheese
  • ½ Cup gruyere cheese grated
  • 3 slices Bacon make sous vide bacon with these directions
  • pinch salt
  • bacon fat for greasing the jars

Instructions 

How do you make sous vide egg bites?

  1. Set your sous vide to 172ºF/77.8ºC.
  2. Using a emersion blender stick, food processor, or blender blend together the eggs, cottage cheese, gruyere cheese and salt until smooth and lump free.
    6 Egg, ¼ Cup Cottage Cheese, ½ Cup gruyere cheese, pinch salt
  3. Grease the bottom and sides of the canning jars with a thin layer of the reserved bacon fat. Pan spray can be used if bacon fat is not available.

  4. Finely crumble the bacon and place ½ a strip of crumbled bacon in each jar.
    3 slices Bacon
  5. Pour the egg mixture over the bacon and fill to the bottom of the the rings on the jar.
  6. Wipe the top of the jar and place on a lid and finger tighten a ring onto the jar.
  7. Cook in the sous vide for 1 hour
