How to make homemade truffle fries in the air fryer.

  1. Cut potatoes into fry shapes and soak in ice water for 5 minutes, then pat dry.
  2. Toss the cut fries with olive oil.
  3. Air fry the oiled fries at 375°F for 35-40 minutes until crispy.

  4. While fries cook, prepare toppings: grate Parmesan and chop parsley.

Truffle Fries in the Air Fryer with Frozen French Fries

  1. Preheat air fryer to 400°F. Add frozen fries to the basket in an even layer and air fry for 15-18 minutes, shaking halfway, until crispy.
  2. In a bowl, toss the hot air-fried fries with 2-3 tablespoons truffle oil until evenly coated. Season with salt.
  3. Return the truffle-tossed fries to the air fryer basket and air fry for 1-2 minutes more.

Parmesan Truffle Fries Made With Frozen French Fries

Serve the Parmesan truffle fries fresh out of the oven while hot and fragrant. The high oven temperature helps re-crisp the frozen fries before tossing in the flavorful truffle oil and Parmesan.

  1. Preheat your oven to 425°F (218°C). Arrange the frozen french fries in a single layer on a large baking sheet lined with parchment paper. 
  2. Bake the frozen fries for 20-25 minutes, shaking the pan halfway, until golden brown and crispy.
  3. While the fries bake, grate the Parmesan cheese and chop the fresh parsley.
  4. Remove the fries from the oven and transfer them to a large bowl. Drizzle with 2-3 tablespoons of truffle oil.
  5. Using tongs or two spoons, gently toss the hot fries with the truffle oil until evenly coated. Season with salt to taste.
  6. Transfer the truffle-tossed fries back to the baking sheet and spread into an even layer.
  7. Sprinkle the freshly grated Parmesan and chopped parsley over the top. Return to the oven for 2-3 minutes until the cheese is melted.

How would you describe the flavor of a truffle?

Truffles have a very distinct, earthy and umami flavor that is hard to compare to other foods. The flavor is often described as luxurious, decadent and almost intoxicatingly aromatic when fresh, high-quality truffles are used.

Truffles have a unique and luxurious flavor profile that is musky, earthy, and redolent of damp forests and fallen leaves. The savory umami richness is similar to aged cheeses, with nutty undertones reminiscent of walnuts.

While some detect mild garlicky notes, truffles have a distinct aroma that can also veer into funky, almost sweaty territory for some.

Do truffle fries actually have truffle?

No, most truffle fries do not actually contain any pieces or shavings of real truffles. They get their truffle flavor from truffle oil, which is an olive oil that has been infused with molecules that mimic the aroma and flavor of truffles.

Real truffles are extremely expensive and rare, so using actual truffles on something like french fries would make them prohibitively costly for most restaurants and food vendors. The truffle oil provides that distinctive truffle aroma and taste without having to use the real fungus.

Some higher-end restaurants may offer truffle fries made with shavings of real black or white truffles on top as a premium item. But for the vast majority of truffle fry offerings, it's just regular french fries tossed with truffle-flavored olive oil rather than containing any part of the actual truffle itself.

What can I substitute for the truffle oil?

The truffle oil provides the most authentic flavor, but these substitutes can give you those beloved earthy, rich truffle notes. If you don't have truffle oil, there are a few substitutions you can use to still get that truffle flavor in your fries:

  1. Truffle salt or truffle powder - Look for truffle salt or truffle powder/seasoning in the spice aisle. A little goes a long way in providing that distinctive truffle aroma and taste.
  2. Dried porcini mushroom powder - Grind up some dried porcini mushrooms into a powder. Porcinis have an earthy, umami flavor somewhat reminiscent of truffles.
  3. Mushroom seasoning blend - Use a mushroom seasoning blend that contains dried porcini or other umami mushroom varieties.
  4. Finely grated Parmesan cheese -Parmesan has a nutty, savory flavor that pairs well with mushrooms/truffle flavors.
  5. Garlic powder and onion powder - These can help enhance the savory, earthy notes when combined with the mushroom powder/seasoning.

To make truffle-style fries without oil, try tossing the hot fries with 1-2 teaspoon truffle salt/powder or mushroom powder, along with grated Parmesan, garlic powder, salt and pepper to taste. Or make a herby mushroom seasoning with dried porcini, thyme, Parmesan and olive oil to toss the fries in.

How to reheat truffle fries

Here are simple instructions for reheating leftover truffle fries to get them crispy again. Be sure to only reheat the amount of fries you plan to eat right away. The more surface area exposed, the better for re-crisping. Check and shake/toss frequently to prevent over-browning. Adding a light drizzle of fresh truffle oil after reheating helps revive that rich truffle aroma and flavor.

Reheating in the Oven:

  1. Preheat your oven to 400°F (200°C).
  2. Spread the leftover truffle fries out in a single layer on a baking sheet lined with parchment paper or foil.
  3. Bake for 5-7 minutes, shaking the pan halfway, until fries are hot and crispy again.
  4. Optional: Drizzle with a little extra truffle oil and toss to re-coat the fries before serving.

Reheating in the Air Fryer:

  1. Preheat your air fryer to 375°F (190°C).
  2. Place the leftover fries in the air fryer basket, spreading them out evenly without overcrowding.
  3. Air fry for 3-5 minutes, shaking the basket halfway, until fries are hot and crispy.
