    This basic beet juice recipe is delicious on its own or use it as a foundation for making other beetroot juices. Juiced beets are naturally sweet and an easy, delicious way to get a concentration of vitamins and nutrients into your digestive system.

    I am such a fan of beets that I plant them in my vegetable garden each year. While some kids were taking bananas in their lunch, I was taking pickled beets in a Tupperware. My love for beets is strong.

    If you are wary of trying new vegetables I highly recommend roasting them. Roasting brings out the natural sugars and makes them super sweet. I got 'adventurous' this year and learned to sauté beet greens so that no part of the vegetable went to waste. I was shocked on how much I loved them.

    If you don't grow your own beets, keep in mind that beets are available year-round in most grocery stores. Boiled beets are perfect for adding an extra boost of nutrients to any salad or even a healthier snack option.

    How to juice beets:

    1. Start by washing the beets and removing the stems, saving the stems and leaves to make sautéed beet greens.
    2. If the beet is too large to pass through the feeder tube of the juicer, slice the beet into pieces to fit.
    3. Turn on the juicer to high and using the plunger, press the beets through the juicer, catching the juice in a pitcher as it is extracted.beet juice being extracted from a juicer
    4. Add a teaspoon of fresh lemon juice to the beet juice to help minimize oxidation.

    How to make beet juice without a juicer

    If you want to make beet juice but don't have a juicer, fear not! It can be done. A quality juicer such as a Breville juicer can be an investment if you are not juicing daily or even weekly. It took me learning to make green juices as part of my routine to want to have a juicer in my life.

    1. Wash, peel and remove the leaves and stems from the fresh beets.
    2. Using a box grater, grate the beet to shreds.
    3. In a food processor or blender, pulse the shredded beets and 1 teaspoon fresh lemon juice until smooth.
    4. To strain the beet juice, press the puree through a fine-mesh strainer or two layers of cheesecloth.

    Now that you have the basics of juicing beets down, you are going to want to find your favorite beet juicing recipe. Elevate your beet juicing experience by adding other fresh fruits and vegetables to the juice for added nutrition and layers of flavors.

    Beet Juice Recipes:

    • Ginger Beet Juice: 2 large raw beets, peeled, 3-4 large apples, 2-inch piece of fresh ginger, peeled a large fistful of organic parsley, 1 lemon, juiced
    • Kale Ginger Beet Juice: 2 beets, 1 lemon, peeled, 1 ½-inch slice fresh ginger, 1 carrot 1 cup kale (stems included)
    • Beet Celery Juice: 2 raw large beets, peeled, 3 large apples, 3 carrots, 2 inches fresh ginger, peeled, 5 stalks celery, 1 lemon
    • Garden Basket Beet Juice: 2 beets, 2 carrots, 2 Granny Smith apples, 2 clementines, peeled, 7 strawberries, 1 lemon, juiced, small piece of fresh ginger, peeled
    • Blueberry Beet Juice: 1 cup Blueberries (fresh or frozen blueberries), 2 cups kale, 1 medium beet, ½ lemon, peeled, 1-inch piece of fresh ginger, peeled

    Beet juicing tips:

    • If a beet is not as firm as you would like, soak it in fresh water over night.
    • Be sure to wash all dirt from the beet
    • The beet stems and the leaves are also able to be added to the juice.
