Additions/variations to watermelon and feta salad:
This recipe is a basic recipe but you may want to add another ingredient or two to make this summer salad different or special from the norm. Here are my favorite suggestions:
- Red onion: slice red onions paper thin and add to the salad. My husband is not a fan of raw red onion so I don't add onion if I know he is going to be eating it.
- Cucumbers: Slice a cucumber in half along the length and remove the seeds. Slice into ¼" slices. Add the slices to the salad or dice the cucumber half moons into tiny dice.
- Jalapeno pepper: remove the stem and seeds of a jalapeno pepper (or other hot pepper of your choice) and finely mince it before adding to the dish.
- Arugula: Just before serving, sprinkle fresh arugula over the salad. This will not only give a pop of green color but also a nice bite of peppery flavor.
- Honey: add a heavy drizzle of honey or hot honey over the watermelon before serving.
How to make feta cheese and watermelon salad

- Start by preparing the watermelon. Use a sharp knife to carefully slice the watermelon into bite-sized cubes, discarding the rind any seeds if you are not using a seedless watermelon. Transfer the cubed watermelon to a large bowl.
