    • Basil: try using fresh leaves instead of dried, or try crushing them slightly to release more aroma. 
    • Black Pepper: any type will do, but use coarse ground black pepper for a better flavor. You can also try using pink or green peppercorns for a unique twist. 
    • Herbs: use other herbs like thyme or parsley instead of basil, and red pepper flakes for added heat.
    • Fennel Seeds: Fennel seeds have a sweet, licorice-like flavor that adds depth and complexity to the sauce. They are not a flavor that everyone loves so use sparingly if you know someone is sensitive to this specific flavor profile.
    • Bay Leaves: bring a subtle earthy flavor and aroma to the sauce. Be sure to remove them before serving as they can be tough if eaten. i tell people that if they find the bay leaf in the sauce they are the 'winner'. Winner of what? Finding the bay leaf. Just an example of my quirky sense of humor.
    • Thyme: brings sweet and savory notes with hints of mint and lemon. It will lend a warm, aromatic flavor to your sauce.
    • Rosemary: has a slightly bitter, pine-like flavor that goes well with tomatoes and garlic.
    • Oregano: complements basil nicely as it provides a more robust, pungent flavor.

    Here are some tips that I have learned over the years to lessen the saltiness in tomato sauce.

    Add more liquid: This will dilute the sauce and help to reduce the saltiness. You can add water or unsalted broth to the sauce until you reach your desired taste.
    Add acid: Adding an acidic ingredient like vinegar or lemon juice to your sauce can help balance out the saltiness by counteracting it with tartness.
    Add sweetness: Adding a sweet ingredient like sugar or honey can also help balance out the saltiness in your sauce.
    Add more pasta: If you’ve made too much sauce and it’s too salty, adding more pasta will increase the overall volume of food and dilute the saltiness that way.
    Make another batch without salt and mix them together: If all else fails, you can make another batch of spaghetti sauce without adding any salt and mix it with the original batch.

    Remember, when adjusting seasoning in a recipe, always do so gradually, tasting as you go until the desired flavor is reached.
