How To Boil Beets:

- Bring a large pot of water to a boil. Add enough water to cover the beets.

- Bring the water to a boil, place the beets to the pot and boil for 30 to 40 minutes. Depending on the size of the beets, the larger the beets, the longer it will take to cook them.
- Insert a sharp knife into the beet to know if you cook them properly and if it easily slides to the center of the beet, you'll know it is cooked.
- Use tongs or a slotted spoon to remove the beets from the water.
- Transfer to a clean plate and allow the beets to cool for 15 minutes or until comfortable to handle.
- Remove the skin from the beets by pinching the skin loose from the beet.
- Finally, slice the beets to your preferred sizes.
- Store sliced beets in an airtight container for up to 1 week.

- Peel the beets with your fingertips while the beets are still warm. Once they cool all the way down, it is next to impossible to peel.
- To avoid getting beet juice stains on your hands, you'll want to wear food-safe gloves.
- To clean the cutting boards of beet stains, use a combination of lemon juice and salt, rubbing in a circular motion.

Can you save the beet juice, freeze and add to future smoothies?

You CAN.... there are nutrients in the water BUT I would be concerned about dirt and sediment. I toss mine. If you do choose to save it, I would advise allowing everything to settle and then pour off the top.
