This recipe is a copycat version of the starbucks sous vide egg bites. Made in mason jars, instead of a silicon mold, egg cup or muffin tin, these breakfast bites are easily transportable for a low carb quick breakfast on the go for those busy mornings. Make egg bites as part of your weekly meal prep.

I explain in simple terms everything home cooks need to know about sous vide cooking. Be sure to make sous vide bacon for this recipe. Are these like the ones at Starbucks?
In recent years Starbucks made sous vide egg bites popular with their guests. This recipe will help you recreate your favorite breakfast at home as best you can without setting foot in the store!
There can be a variety of ingredients in an egg bite but in this recipe, I have included, eggs, cottage cheese, cooked bacon and gruyere cheese. The key to including your favorite ingredient in a breakfast egg bite is to make sure the ingredients are chopped small enough to be bite sized. No need for cream cheese or heavy cream. The secret is cottage cheese.

- whole eggs (shakshuka is another delicious egg recipe)
- cottage cheese
- gruyere cheese
- crisp bacon (make sous vide bacon with these directions)
- pinch salt
- bacon fat for greasing the jars
Other mix-ins, optional:
- Cheddar cheese - shredded
- Monterey Jack Cheese
- Red pepper
- Green onion - chopped, gree parts only
- Goat cheese
- Egg whites only!
- Hot sauce
- any other of your favorite ingredients

- Immersion blender or blender - Makes a huge difference in getting the velvety texture that everyone loves in Starbucks' sous vide egg bites
- 4 oz mason jars
- Lids and bands for those jars
- Sous vide machine - I have a Chef Steps immersion circulator but I know that many people love their anova sous vide machines

- Set your sous vide to 172ºF/77.8ºC.
- Using an emersion blender stick, food processor, or blender blend together the eggs, cottage cheese, gruyere cheese and salt until smooth and lump-free.
- Grease the bottom and sides of a small mason jars with a thin layer of reserved bacon fat. Pan spray can be used if a little bit of bacon fat is not available.
- Finely crumble the bacon and place ½ a strip of crumbled bacon in each jar.
- Pour the egg mixture over the bacon and fill to the bottom of the rings on the jar.
- Wipe the top of the jar with a clean paper towel and place on a lid and finger tighten a ring onto the jar.
- Lower the jar into the preheated sous vide cooker making sure there is enough water to cover the top of the jars by at least one inch.
- Cook in the sous vide for 1 hour

How long do egg bites last in the fridge?
I keep my egg bites in the fridge for up to a week. But with a family like mine, nothing lasts that long!
Can you freeze sous vide egg bites?
Breakfast egg bites freeze and reheat very well. Make them in larger batches to have breakfast ready in minutes. Reheat frozen egg bites in the microwave for 1 ½ to 2 minutes or until heated through.
Are my sous vide egg bites shelf stable?
Sous vide egg bites are NOT shelf stable. Even though they are in a canning jar and the lid may be tough to get off, it is not sealed and a water bath is not the correct food preservation method for dairy items. All egg bites should be stored in the refrigerator.

How do you reheat sous vide egg bites?
They can be reheated in or out of the jar. This makes the perfect on-the-go eco-friendly breakfast food.
To reheat in the jar:
- remove the metal lid and ring
- Microwave for 30 seconds or until hot.
- Remove from the microwave with caution.
To reheat out of the jar:
- Run a butter knife or a flat metal spatula around the egg bite between the egg and the jar to loosen.
- Gently pull the egg bite toward the center of the jar to allow air to get under the egg.
- Flip on a plate and shake to remove.
- Microwave for 30 seconds or until hot.
- Remove from the microwave with caution.

Sous vide (pronounced “sue-veed”) egg bites are mini crustless quiches. The sous vide cooking method ensures that this healthy breakfast food has a perfect velvety, custard texture. Egg bites can have a variety of additions to the egg mixture to include bacon, cheese, spinach, sun-dried tomatoes and sautéed vegetables to name a few. These egg bites are very versatile to many dietary restrictions.
As long as you fill the jars to the bottom of the threads on the side of the jar, you should not have problems with the jars floating. But things happen from time to time and you may have a jar float. To solve this, place something that is both heat save and not buoyant on the jar to beep it submerged. I have a metal meat tenderizer that I use. Another alternative is to place a cooling rack or a colander in the bath with something heavy in/on it to keep the jars submerged in the water.
his recipe for egg bites is gluten free because I was sure to check the labels on the ingredients for this recipe. Be sure to check the labels of your cottage cheese and bacon because some manufactures will have a food starch in cottage cheese. Be sure to check the ingredient listing on bacon as well.
Personally, I do reuse lids and rings for my sous vide egg bites. As long as the edge of the lid is not damaged enough to allow water to seep into the jar, I will use it. Traditionally lids can not be reused for canning purposes.
This recipe can easily be doubled or tripled. In the recipe card below, hover your mouse over the '6' in servings and slide the slider to how many egg bites you want to make. The ingredient amounts will adjust accordingly.
I recommend using rendered bacon fat or a non stick pan spray to coat the inside of the glass jars before you fill. This will help them release from the jars if you wanted to serve without the jar and it will further help in cleanup of the jars.
Set your sous vide to 172ºF/77.8ºC for egg bites. This temperature will give you silky, creamy egg bites without being rubbery in texture.
