The purpose of roasting peppers is to enhance their flavor and texture. Roasting peppers helps to develop a smoky, sweet, or caramelized taste by intensifying the natural sugars present in the peppers. It also adds depth and complexity to their flavor profile.
Roasting peppers also transform their texture. The process of roasting softens the pepper’s flesh, making it tender and easier to eat. The outer skin of the pepper becomes blistered and charred, which can be peeled off after roasting if desired.
