Chicken Dorito Casserole Recipe

Dorito chicken casserole is an easy chicken casserole that my family loved.  This delicious casserole dish that has the crunch and flavor of Doritos and the spice of Rotel tomatoes.

Instructions

All our favorite flavors together in one dish. Creamy and cheesy, the simple ingredients will make you want to make this favorite easy recipe now.

  1. Spray a 9x13 casserole dish with cooking spray and set the oven to 350.
  2. Combine the cooked chicken with the cream of chicken soup and sour cream in a large mixing bowl.
  3. Fold in the can of drained Rotel tomatoes and the taco seasoning.
  4. Crush the Doritos to medium bite-sized pieces and spread ⅓ of the crushed Doritos evenly on the bottom of the prepared baking dish.
  5. Spread ½ of the chicken mixture over the Dorito chips and spread ½ the shredded cheese blend over the first creamy chicken layer.
  6. Repeat with a second layer of crushed chips, shredded chicken blend and finish with the remaining cheese.

  8. Put any remaining crushed Doritos or shredded cheese on top of the casserole when serving.

Ingredients

  • 2 Cups chicken cooked and shredded
  • 2 Cups Mexican cheese blend divided
  • 1 10- ounce can cream of chicken soup
  • 1 Cup Sour Cream
  • ½ packet taco seasoning
  • 1 can Rotel tomatoes drained
  • 1 large bag Doritos medium crushed

  1. Spray a 9x13 casserole dish with cooking spray and set the oven to 350.
  2. Combine the shredded chicken with the cream of chicken soup and sour cream in a large bowl.

Notes

Can this casserole be frozen?
Assemble the recipe up until adding the Dorito topping and wrap tightly with foil. When you are ready to bake it add the crushed Doritos and extra cheese. Re-cover with foil and bake in a preheated 350-degree oven until it is cooked thoroughly and bubbling, approximately 45 minutes-1 hour. 
 
Can you use rotisserie chicken in this casserole?
If you are in a pinch or a hurry and don't have precooked, shredded chicken a rotisserie chicken will work in this casserole recipe. The flavor profile of the rotisserie chicken may alter the final results of the dish but I assure you, it will be delicious. If you have a few extra sous vide chicken breasts in the fridge, they can be used in this recipe.

What to serve with Doritos casserole

For a satisfying meal that pleases the whole family, consider serving a side salad alongside your Doritos casserole to balance out the flavors and add a refreshing contrast to the meal. For a casual dessert that fits right in, Chocolate Lasagna is always a good choice.

What else can I use instead of Rotel?

If you are not a fan of Rotel or are out of it I would substitute in a thick salsa or a well-drained salsa. You are going to want to use a cup.

Can I substitute cream of mushroom soup?

Cream of mushroom soup would be a good substitute for the cream of chicken soup in my recipe for Dorito chicken casserole. I have done it when I am out of the cream of chicken soup and the only thing my family noticed was 'something' was different but they couldn't pick out exactly what it was.

Can you use rotisserie chicken meat in this casserole?

If you are in a pinch or a hurry and don't have precooked, using a rotisserie chicken will work in this cheesy chicken Dorito casserole recipe. The flavor profile of the rotisserie chicken from the store may alter the final results of the dish but I assure you, it will be delicious. If you have a few extra sous vide chicken breasts in the fridge, they can be used in this recipe.

What can I substitute sour cream with?

To make creamy chicken casserole without sour cream, you could substitute it with plain yogurt or a combination of mayonnaise and milk to maintain the creaminess.

If chicken dinner recipes are a family favorite, you are going to want to add slow cooker cilantro lime chicken, and Mexican corn chicken soup to your meal plan. To properly store leftover casserole, place it in an airtight container and refrigerate it promptly, ensuring the leftover chicken casserole is consumed within 3-4 days to maintain freshness.

Make ahead tip

You can assemble the casserole in advance, letting flavors meld for a yummy cheesy casserole whenever you're ready to bake it.

Can this casserole be frozen?

Yes, you can freeze this recipe! Assemble the recipe up until adding the Dorito topping and wrap tightly with foil. When you are ready to bake it add the crushed Doritos and extra cheese. Re-cover with foil and bake in a preheated 350-degree oven until it is cooked thoroughly and bubbling, approximately 45 minutes-1 hour. 

Can Dorito casserole be made ahead of time?

This recipe for Dorito chicken casserole can be made ahead of time and baked off for dinner. I find that the Doritos do take on a softer texture but that is just my observation. I would reserve a handful of crisp Doritos to give an added layer of crunch when the dish comes out of the oven. 

Is it okay to use cool ranch Doritos chips for this cheesy chicken Dorito casserole?

It's perfectly fine to use cool ranch crunchy Doritos instead of nacho cheese Doritos for this easy Doritos chicken casserole. It may slightly affect the flavor, but it should still result in a tasty dish when used in the recipe.

    I made this in two 9x9 pans,freezing one for later. I served it for dominoes night with the in-laws and it was a hit! I used tortilla chips and the entire package of taco seasoning. We will be keeping it in rotation.

    It's good. Used rotisserie chicken for this recipe and used Spicy Nacho Doritos instead of regular Doritos and will be making this again.

    Made this with whole Roasterie chicken pulled apart and shredded and used the Spicy Nacho Doritos instead of regular Doritos. It's not too bad but will have to cook it longer than 25 minutes more like 30 to 35 minutes. Will make this again.

    Love this recipe! I used a large rotisserie chicken, added a heaping of cooked rice, block of cream cheese and added some of the shredded Mexican blend cheese in the mixture. I used organic/clean “nacho corn chips” on top instead of layering and it was absolutely fantastic! I also doubled up on the taco seasoning.

    Absolutely loved this recipe!! I added some corn and black beans to it as well. Then when it was finished I added lettuce, tomatoes, cheese, and the left over Doritos into a bowl. And oh my goodness, this was superb!!! Definitely will make again.

    This is a very tasty casserole! I love the layers, I’ve made a similar casserole to this and it does not have the layers and it’s not as good. I would highly recommend this casserole, you can add things to it like corn or black beans, I added corn and my husband & I loved it!! Next time I think I’ll add corn & black beans & increase the sour cream alittle.

    I have made this several times my one girlfriend loves in fact I’m making it for her birthday tomorrow I also add black beans in it it’s terrific and I use a little more cheese because she likes it cheesy comes out perfect

    I just put this chicken Dorito casserole in the oven. I was looking for a way to use up some Dorito chips I had taking up space in the freezer. I had a. Ifently bought some really thick plain yogurt and I used it in place of the sour cream, same taste. Hope it works. I think it will. I have 4 teen grandchildren in my family. I think they will love it!

      the yogurt should work. A slightly different flavor profile but will still be delicious. Also, I have never heard of keeping Doritos in the freezer! Do they keep longer? What is the advantage. I am curious!

      You could try softening 8 ounces of plain cream cheese with some milk until it is the same consistency of sour cream. I hope that helps Norma.
