    Ingredients needed:

    • Sour Cream - full fat
    • Taco Seaoning - sugar free taco seasoning packet or 2 tablespoons of keto taco seasoning. Use ¼ cup of taco seasoning if you are using your own blend.
    • Cheddar Cheese - full fat, shredded. Mexican blend cheese, extra sharp cheddar or other cheddar cheese are delicious options.
    • Rotel - Drained, or other brand of canned diced tomato and chopped green chilies

    How to make this recipe:

    1. Drain the Rotel in a collander for a few minutes to remove the excess moisture. ingredients in a bowl, ready to be mixed

Frequently asked questions, answers and tips:

    Boat dip variations

Bacon Bits - make your own bacon bits with keto-friendly bacon (optional but still delicious)
Diced Chilis - add a 4 ounce can of diced chillis for additional heat and flavor.
Jalapeno - add more spice and heat with a finely dices jalapeno.
Mexi-Corn - not keto-friendly but a small can of drained Mexi-Corn will ad a touch of sweetness and crunch to this dip.

Why do you drain the Rotel?

Completely optional but I like to remove the extra moisture to help keep the dip from becoming too watery. If you are in a hurry or prefer you can just dump in the full can.rotel tomatoes in a colander, draining

What do you serve with boat dip?

If you are keeping keto or low carb serve pork rind chips or cup up vegetables. I don't keep keto so I love a Frito Scoop corn chip or traditional tortilla chip. I have even been known to dollop this dip on tacos or a burger!

    What if I can't find a sugar-free taco seasoning?

If your grocery store does not carry a sugar-free taco seasoning you can easily make one yourself. Head over to my keto taco seasoning recipe and make a batch in less than 5 minutes. keto taco seasoning in a small white bowl horizontal image
