While this recipe is a favorite for when I want to serve a warm corn casserole my kids want me to make Mexican corn dip when it is Taco Tuesday. In fact, I will be taking sous vide flank steak fajitas to my mom's house next week for her birthday and my sister is bringing the corn dip!

- green onions- chopped, divided. Reserving some for garnish

🔪 How to make Mexican corn casserole, basic instructions
- In a large bowl, combine all the ingredients with the exception of the cheese, mixing well to combine.
- Spoon into a baking dish sprayed with non stick pan spray.
- Sprinkle cheese over the casserole and cover with aluminum foil.
- Bake for 20 minutes, remove foil and bake an additional 20 minutes.
- Garnish and serve.

- In a large bowl, mix together corn, mayo, chipotle pepper, green onions salt & pepper until well combined.
- Spoon into 13x9 dish sprayed with nonstick spray
- Sprinkle cheese over the casserole. Cover with foil.
- Bake covered for 20 minutes, then remove the foil and bake uncovered for another 20 minutes.
- Garnish with reserved green onion, squeeze on lime juice, and add hot sauce if desired.
- Serve immediately and enjoy!
