Strawberry soup is a summer soup made with fresh strawberries, vanilla yogurt, sour cream, and fresh lime juice blended to make an easy, delicious cold summer soup.

🍓 Ingredients for Strawberry soup:
- strawberries - frozen or fresh. If you want to learn how to freeze strawberries, I can teach you!
- sour cream - for once I am going to say that you can use low fat sour cream. I am usually an advocate for full fat but this recipe will work with a lower fat sour cream.
- Vanilla yogurt - vanilla yogurt gives it another layer of flavor. But plain yogurt will work as well.
- lime juice - fresh is best but use bottled if that is what you have on hand.
- salt - even in sweet dishes salt is good. Salt enhances sweetness.
- sugar - just a bit, especially if your strawberries are out of season and need an extra hint of sweetness.
- heavy cream - this is why we can use a low-fat sour cream! heavy cream is coming in to help balance the soup.
🥄 How to make strawberry soup:
- If the strawberries are frozen, thaw them and keep the juices.
- In a food processor puree the strawberries, sour cream, yogurt and the rest of the ingredients listed.
- If a food processor is not available an immersion blender or blender will work.
- Chill for at least an hour.
🌿 Garnishes
While the strawberry soup is lovely on its own you may want to offer a few garnishes to the soup to give a bit of decoration, added flavors and contrast in texture. I would suggest:
- Diced fresh strawberries
- Whipped cream
- Vanilla yogurt dollop
- Granola
- Toasted angel food cake
- Pound cake squares
- Sliced mint
- Lime zest

Freezing strawberry soup is a great way of enjoying it at a later date if you make a large batch or want to prepare it ahead of time. Fill freezer save containers with soup, leaving a bit of space at the top for freezing expansion and don't forget to mark the date on them. Allow to thaw in the refrigerator.
