How do you make peach gazpacho?
- Puree the peaches, yellow tomato, yellow bell pepper, cucumber, lime juice, balsamic vinegar and sugar in a food processor.
- Process in batches, if needed.
- Season with salt.
- Chill in the refrigerator for 2 hours.
- For a more textured gazpacho leave the soup as is.
- For a smoother soup, sieve soup through a mesh strainer.

This gazpacho soup is able to be frozen to be enjoyed year round. Portion into single serve freezer containers for convenience. Store in freezer canning jars, the ones with out the shoulders, or freeze in Vac and Seal bags.

Love, love, love this recipe! Summer is so hot here in Florida that a cold soup sounds like the most refreshing thing in the world. I like the fact that everything is kept raw and pureed. I bet it tastes like a piece of peach pie in a bowl with a bit of an herbal twist. Def going to have to try this.
