One of my favorite no-bake treats is this scotcheroos recipe. Ready in less than 30 minutes they are addictively delicious and a definite crowd-pleaser. Perfect for freezing and cookie exchanges.

My recipe for scotcheroos includes corn syrup, sugar, smooth peanut butter, crisp rice cereal, chocolate chips, and the best ingredient: butterscotch morsels.

Notes on the ingredients
- To make these cocoa scotcheroos switch out the rice cereal (rice crispies) for chocolate crisped rice (cocoa crispies)
- For a peanut-free, allergy-friendly scotcheroo switch out the peanut butter for a nut-free alternative such as pecan butter.
No Bake Scotceroos Recipe Instructions:

- In a medium saucepan, over medium heat, stir together the corn syrup and sugar. Stir frequently, until the sugar dissolves and the mixture just begins to simmer. Do not overboil.
- Remove from heat. Stir in peanut butter, and incorporate completely.
- Add chocolate flavored crips rice cereal. Stir until well coated.
- Spray a 9x13 pan with cooking spray. Press scotcherros mixture into the pan. Set aside.
- Microwave the chocolate and butterscotch chips together stirring occasionally.
- Spread evenly over cereal mixture. Sprinkle with extra chips and cereal for garnish.
- Let stand until firm. Cut into bars when cool.
Storage Tips
Scotcheroos freeze and thaw very well. I like to precut them and store them in a freezer-safe container. An added tip would be to place pieces of waxed paper, parchment paper or plastic wrap in between the layers.
FAQ's and Tips
If you find your scotcheroos are hard to cut, chances are that you let the sugar and corn syrup mixture come to a boil and boil for too long. The sugar and corn syrup just needs to come to a simmer so that the sugar is able to dissolve. A rapid boil will make the scotcheroo hard and crunchy when they cool. Just be careful next time.
Scotcheroos are made with peanut butter but what do you do if your family has a peanut allergy? An alternate nut butter can easily be substituted in for the peanut butter. Just be sure to use the creamy version of the nut butter and be sure to stir the peanut butter substitute before measuring it for the recipe.

Coat the measuring cup with cooking spray before measuring the corn syrup. The syrup will pour easily out of the cup.
