The first time I grabbed a cold cup of strawberry fruit water from a street cart in Mexico, I was hooked. Back home, I had to recreate it. This strawberry agua fresca - also called agua de fresa - is that same light, barely-sweet, vibrantly fruity drink, and you can make it in about 10 minutes. It's not juice. It's not a smoothie. It's just ripe strawberries, water, a little sugar, and a squeeze of lime working together in perfect harmony.

You don't need much to make a truly great strawberry agua fresca...that's kind of the whole point! This is a drink that lets the fruit shine. Use the ripest, sweetest strawberries you can find; the better the berry, the better the drink. Frozen strawberries work great here too, since they're frozen at peak ripeness and are often sweeter than out-of-season fresh ones.

What are the different types of aguas frescas?

Aguas frescas are a popular Mexican drink made from fresh fruit, water, and sweetener. Here are some different types of aguas frescas:

  • 🍈 Melon : Made by pureeing ripe cantaloupe or honeydew melon with water and sugar.
  • 🍍 Pineapple: Made by blending fresh pineapple chunks with water and sugar.
  • 🥒 Cucumber Lime: A refreshing and hydrating drink made by blending fresh cucumber, lime juice, water, and sugar.
  • 🍉 Watermelon: Made by blending ripe watermelon with water and sugar to taste.
  • 🥥 Coconut: A creamy and tropical drink made with coconut milk, water, and sweetener.
  • 🌶️ Mango Chile: A spicy and sweet drink made with fresh mango, lime juice, chili powder or hot sauce, and water.
  • Beet: Made by blending cooked beets with water, lime juice, and sugar for a vibrant pink drink.

Strawberry Agua Fresca Variations:

Strawberry is my personal favorite, but once you get the hang of making agua fresca, you'll want to try every variation. Here are some of the most popular types...each one is just as easy to make and just as delicious.

  • Sparkling strawberry agua fresca: Swap still water for sparkling or club soda for a bubbly twist.
  • Strawberry mint agua fresca: Blend in 6-8 fresh mint leaves for an extra-cool finish.
  • Strawberry watermelon agua fresca: Replace half the strawberries with ripe watermelon; no extra sugar needed.
  • Strawberry mango agua fresca: Blend equal parts strawberries and mango for a tropical upgrade.
  • Spicy strawberry agua fresca: Add a small pinch of chili powder or a few slices of jalapeño for heat.
  • Naturally sweetened version: Use agave syrup, honey, or skip the sweetener entirely if your berries are ripe.

How do you make strawberry agua fresca?

Making strawberry agua fresca at home is genuinely easy, even if you've never made it before. The only "technique" involved is knowing when to add your water (hint: after the first blend).

Prep the strawberries

Hull and roughly slice your fresh strawberries. No need to be precise...they're going in the blender.

Blend the strawberries

Add the sliced strawberries and sugar to the blender. Blend until you have a smooth, thick strawberry purée.

My two-step method (blending fruit first, then adding water second) gives you better flavor extraction.

Add the water and lime juice

Pour in the cold water and fresh lime juice. Blend again until fully combined and smooth.

Taste and adjust

Taste the mixture. Add more sugar if your strawberries were tart, or a little extra lime juice if you want more brightness. Blend briefly to incorporate.

Strain into a pitcher

Pour the mixture through a fine mesh strainer into a large pitcher to remove seeds and pulp. Use a spoon to press the pulp gently and get every last drop of flavor.

Chill and serve

Refrigerate for at least 30 minutes, or serve immediately over ice.

Make-Ahead Tips

Pro tip! Strawberry agua fresca is actually better when made ahead. The flavors meld and deepen after a few hours in the fridge.

Here's how to set yourself up for success:

  1. Make it up to 24 hours in advance and keep it refrigerated in a sealed pitcher or jar.
  2. For parties, blend the strawberry purée the day before and add water right before serving to keep it freshest.
  3. Stir or shake vigorously before serving...the fruit naturally settles to the bottom.
  4. Add ice to individual glasses, not the pitcher, to prevent dilution.

  • Freezer: Pour into ice cube trays and freeze. Pop a few cubes into a glass of water for a quick strawberry agua fresca on demand - no waste, no fuss.
  • Do not store with ice: always add ice at serving to prevent the drink from getting watered down.
