Asian Ramen Noodle Salad
I can't tell you how much I love this salad. There is just something about the crunch of the shaved brussels sprouts, the sesame oil, the toasted almonds and then the pop of the sweetness of the mandarin oranges. The longer the salad sits in the refrigerator the softer the crunchy ramen noodles will become.If you like a crunchier noodle, don't let the salad rest too long.
Ingredients:

- Brussels sprouts, shaved
- shredded carrots
- Mandarin oranges, drained, juice reserved
- scallions, greens julienne
- sliced almonds, toasted
- rice vinegar
- mandarin orange juice
- soy sauce
- sesame oil
- sugar
- black sesame seeds, optional
- sunflower seeds - learn how to roast sunflower seeds
- ramen noodles, oriental flavor
Directions:

- Combine the shaved brussels sprouts, shredded carrots, scallions, sliced almonds, black sesame seeds and sunflower seeds in a large salad bowl.
- Whisk together or shake in a closed mason jar the rice vinegar, mandarin orange juice, soy sauce, sesame oil, sugar and the packet from the ramen noodles.
- Crush the ramen noodles.
- Combine the brussles sprouts salad, the dressing, mandarin oranges and the crushed ramen noodles.
- Allow the salad to marinate for at least an hour.
- Stir before serving.
