This bacon jam recipe is not only savory with a touch of sweetness and a hint of thyme, bourbon and espresso but it is a Paleo bacon jam recipe! Spread on crostini for a savory appetizer or dollop on a hamburger for a knock out burger bite.

I love bacon jam but sometimes you don't want an overly sticky, sweet jam. This bacon jam is more of a spread and definitely a savory spread.
Ingredients needed to make bacon jam
- thick-cut bacon
- shallots ( ½ cup)
- garlic, grated
- thyme (fresh or dried)
- espresso
- bourbon
- honey
- butter (omit for true Paleo)
- olive oil
How do you make bacon jam?
- Crisp the bacon.
- Cook the shallot, garlic and thyme in the hot bacon grease.
- Add the crisp bacon, the sautéed shallots, garlic and thyme to a blender.
- Add the bourbon, honey, butter, olive oil and bacon fat to the blender.
- Pulse to chop the bacon jam.
- Taste for seasoning and adjust with salt and pepper.

Store the jam in an airtight container in the refrigerator. Use within a week. This jam is not shelf-stable, it needs to be refrigerated. Allow the bacon jam to come to room temperature before serving for the most delicious results.

- Freeze the bacon for 30 minutes before chopping to make it easier to slice.
