    Bacon Jam Recipe Without Onions

    This bacon jam recipe is not only savory with a touch of sweetness and a hint of thyme, bourbon and espresso but it is a Paleo bacon jam recipe! Spread on crostini for a savory appetizer or dollop on a hamburger for a knock out burger bite.

    I love bacon jam but sometimes you don't want an overly sticky, sweet jam. This bacon jam is more of a spread and definitely a savory spread.

    Ingredients needed to make bacon jam

    • thick-cut bacon
    • shallots ( ½ cup)
    • garlic, grated
    • thyme (fresh or dried)
    • espresso
    • bourbon
    • honey
    • butter (omit for true Paleo)
    • olive oil

    How do you make bacon jam?

    2. Cook the shallot, garlic and thyme in the hot bacon grease. bacon jam ingredients in a blendtec ready to be blended
    3. Add the crisp bacon, the sautéed shallots, garlic and thyme to a blender. butter added to the mixture of bacon jam in a blendtech blender
    4. Add the bourbon, honey, butter, olive oil and bacon fat to the blender. bacon jam pureed in a blender
    5. Pulse to chop the bacon jam.
    6. Taste for seasoning and adjust with salt and pepper.  

    ❄️ Storage tips

    Store the jam in an airtight container in the refrigerator. Use within a week. This jam is not shelf-stable, it needs to be refrigerated. Allow the bacon jam to come to room temperature before serving for the most delicious results.

  • Freeze the bacon for 30 minutes before chopping to make it easier to slice.
  • 👩‍🍳 Chef Tip

    • Switch up bacon and use peppered bacon for a different flavor profile.
    • If shallots are not available in your area, a substitute is red onion.
    • If fresh thyme is not available, substitute in 1 teaspoon dried thyme.

    Ingredients
     

    • 1 lb bacon
    • 2 shallots (½ cup)
    • 2 gloves garlic
    • 1 tablespoon fresh thyme
    • 1 tablespoon bourbon
    • 3 tablespoons honey
    • 2 T butter
    • 1 teaspoon olive oil

    Instructions
     

    • In a heavy bottom or cast iron pan, crisp the bacon.
      1 lb bacon
    • Remove the crisp bacon to a plate and cook the shallot, garlic and thyme in the hot bacon grease.
      2 shallots, 2 gloves garlic, 1 tablespoon fresh thyme
    • Add the crisp bacon, the sautéed shallots, garlic and thyme to a blender.
    • Add the bourbon, honey, butter, olive oil and bacon fat to the blender. (omit butter for Paleo)
      1 tablespoon bourbon, 3 tablespoons honey, 2 T butter, 1 teaspoon olive oil
    • Pulse to chop the bacon jam.
    • Taste for seasoning and adjust with salt and pepper. 

    Notes

    Tips for making bacon jam:
