What temperature should ground beef be cooked to?
Cook ground beef to 160F, measured with an instant-read thermometer. Grinding mixes any bacteria from the surface of the meat all the way through, which is why ground beef needs a higher temperature than a steak.
Do not rely on color. Ground beef can turn brown before it reaches a safe temperature, and some stays pink even after it does.
How long does raw ground beef last in the refrigerator?
Cook or freeze raw ground beef within 1 to 2 days of buying it.
Frozen ground beef stays safe as long as it stays frozen, but use it within about 4 months for the best flavor and texture.
How do I thaw frozen ground beef safely?
Thaw it in the refrigerator overnight, in a sealed bag submerged in cold water (change the water every 30 minutes), or in the microwave. If you use cold water or the microwave, cook it right away.
Never thaw ground beef on the counter. The outside warms into the danger zone, 40F to 140F, while the center is still frozen.
Can I freeze ground beef soups and casseroles?
Yes, most of them freeze well. Cool leftovers quickly and get them into the refrigerator or freezer within 2 hours of cooking.
