Easy Peach Gazpacho Recipe

Peach gazpacho is a refreshing cold summer soup that is a twist on the traditional tomato gazpacho soup. Simple ingredients make for a delicious cold soup that is sweet and satisfying for summer. Peach gazpacho is going to be your next favorite recipe.

Peach gazpacho ingredients:

  • sweet peaches
  • yellow tomato
  • yellow bell pepper
  • cucumber
  • lime juice
  • balsamic vinegar
  • sugar
  • Salt, to taste.

How do you make peach gazpacho?

  1. Puree the peaches, yellow tomato, yellow bell pepper, cucumber, lime juice, balsamic vinegar and sugar in a food processor.
  2. Process in batches, if needed.
  3. Season with salt.
  4. Chill in the refrigerator for 2 hours.
  5. For a more textured gazpacho leave the soup as is.
  6. For a smoother soup, sieve soup through a mesh strainer.

What is Gazpacho Soup?

Gazpacho pronounced gahz-PAH-choh is a delicious and refreshing summertime soup from Andalusia region in southern Spain. This uncooked soup is usually made from a pureed mixture of fresh tomatoes, sweet bell peppers, onions, celery, cucumber, bread crumbs, garlic, olive oil, vinegar and sometimes lemon juice. Gazpacho can be a meal in itself, particularly when extra fresh vegetables such as sliced celery, green onions, cucumber and a green pepper are added. Can I freeze peach soup?

This gazpacho soup is able to be frozen to be enjoyed year round. Portion into single serve freezer containers for convenience. Store in freezer canning jars, the ones with out the shoulders, or freeze in Vac and Seal bags.

Why is gazpacho served cold?

Gazpacho is served cold because traditionally it is made of summer fresh produce and to keep the full fresh flavors the soup is served chilled and raw. By making and serving the soup cold it keeps the kitchen cooler in the summer heat.

Ingredients

  • 3 large peaches
  • 1 large yellow tomato
  • 1 yellow bell pepper
  • 1 Cucumber
  • ⅓ Cup lime juice
  • 2 teaspoons balsamic vinegar
  • 1 Tablespoon Sugar
  • Salt to taste.

    Love, love, love this recipe! Summer is so hot here in Florida that a cold soup sounds like the most refreshing thing in the world. I like the fact that everything is kept raw and pureed. I bet it tastes like a piece of peach pie in a bowl with a bit of an herbal twist. Def going to have to try this.
