Homemade Baking Mix
Every Saturday morning is ‘pancake morning’ in our house. Without fail the kids are
demanding wanting pancakes on a Saturday morning. I have found this homemade baking mix is delicious and the little one has watched me make it so many times he can tell you step by step how to make his pancakes.
We are a household divided. Two of us are plain pancake people and the rest are blueberry people. The kids and I spend hours in the summer picking blueberries and then we bring them home to freeze them. I could eat blueberry pancakes all day long. My oldest is a plain pancake person. She does not know what she is missing!
- 10 cups flour (I use all purpose)
- 1 Tablespoon Salt
- 3 1/2 Tablespoons Sugar
- 1/3 Cup Baking Powder
- 1 cup Shortening. (Crisco or lard…not butter)
- Using a food processor put 1/2 the dry ingredients in the bowl with the blade attachment.
- Add 1/2 of the shortening.
- Pulse until the shortening is combined.
Repeat for the other half of the ingredients.
Store in an airtight container and use as you would any dry baking mix.
Don’t have a food processor? No worries. Just pull out your largest bowl and a pastry blender, a couple of forks or a butter knife and cut in the shortening. You want the shortening to be smaller than pea size. If you want to get really messy use your hands to blend the shorteing into the dry ingredients.
Pancakes are my favorite item to make with this mix. But biscuits are another good option!
