Spring is here and we are finding fresh asparagus in the farmer’s markets and the grocery stores. One of the best ways to enjoy asparagus is to oven roast it. Roasting asparagus is a quick and easy way to enhance the delicate flavors of the asparagus and give the asparagus tips a bit of char.
Pictured on the tray is two pounds of asparagus. Listed in the recipe card are instructions for a pound of asparagus. This recipe can be easily multiplied or divided. Roast an extra pound or two to make cream of asparagus soup.
Roasted Asparagus Ingredients:
- Asparagus, fresh
- Olive oil
- parmesan cheese
- slat and pepper
How to trim the ends from asparagus
- Leave the asparagus bundled in the rubberband.
- Place the asparagus on a cutting board and firmly hold the tip end of the asparagus with one hand.
- Using a sharp knife, use a slicing motion to chop off 1 inch of asparagus.
- Check to be sure the end of the asparagus is moist.
- If the asparagus is dry, slice off another 1/2 inch.
Other ways to enhance the flavors of roasted asparagus.
- add roasted garlic or garlic confit to the pan.
- After the vegetables come out of the oven zest a lemon over them for a bright, fresh flavor.
- Olives can be added to the pan to add a bit of savory saltiness. Check out my warm olives to bake alongside the asparagus.
- Sprinkle a bit of everything but the bagel seasoning when you toss the asparagus with oil.
Best way to roast asparagus:
- Preheat the oven to 425 degrees.
- Trim the asparagus.
- Spread the asparagus in a single layer on a sheet pan.
- Drizzle the asparagus spears with olive oil.
- Sprinkle with salt and pepper.
- Gently toss to evenly coat with the oil and seasonings.
- Roast in the oven.
- Remove from the oven and toss the asparagus.
- Return to the oven and roast until the tips are taking on a bit of char and the stalks are tender.

- 2 tablespoons olive oil
- 1/4 cup parmesan cheese, shredded
- Salt and pepper
Instructions
- Preheat the oven to 425 degrees.

- Drizzle the asparagus spears with a few tablespoons of olive oil.
- Sprinkle with salt and pepper.
- If using parmesan cheese sprinkle the cheese in an even layer.
- Gently toss the asparagus to evenly coat it with the oil and seasonings.
- Roast in the oven for 15 minutes.
- Remove from the oven and toss the asparagus.
- Return to the oven and roast for another 15-20 minutes until the tips are taking on a bit of char and the stalks are tender.
