    Balsamic Roasted Strawberries

    A delicious & non-traditional way to enjoy strawberries is to roast them in balsamic vinegar. Balsamic roasted strawberries have a balance of tang and sweet. I serve balsamic roasted strawberries on a goat cheese crostini.

    Balsamic roasted strawberries have a balance of tang and sweet. I serve balsamic roasted strawberries on a goat cheese crostini. Another fabulous option is to pour balsamic roasted strawberries over ice cream.You will be shocked at how quickly this appetizer comes together.

    Balsamic Roasted Strawberries Ingredients

    • fresh strawberries
    • sugar
    • balsamic vinegar
    • alt

    Garnishes

    • Baguette, sliced and grilled
    • Goat cheese, room temperature
    • Basil, sliced thin, optional.

    How to prepare the strawberries:

    1. Remove the green stem and leaves from the strawberries.
    2. Core the strawberries and slice into quarters or bite sized pieces.
    3. Spread the strawberries in a 9x13 pan in a single layer.
    4. Sprinkle with the sugar and the large pinch of salt
    5. Drizzle the balsamic vinegar over the strawberries.

    Why use salt on strawberries?

    Salt is my 'secret' ingredient. Shhhh. Don't tell.

    Salt is often overlooked in sweet recipes but just a hint of salt can enhance and compliment the sweet. Plus, the salt will draw out the moisture of the strawberries. Then this sweet strawberry juice can reduce and concentrate in the roasting.

    How to roast strawberries:

    • Set oven temperature to 425.
    • Once heated roast the strawberries for 15 minutes. Do not cover the strawberries. The moisture needs to evaporate and concentrate in flavor.
    • After 15 minutes stir the strawberries.
    • Roast for an additional 20 minutes.

    Balsamic Roasted Strawberries

    While the strawberries are still hot, the balsamic vinegar will be very fluid but as it cools, it will thicken and become a fabulous reduction.

    The balsamic roasted strawberries are soft, the sugars are concentrated and the balsamic is reduced! Perfect for spooning over goat cheese crostini.

    3. Place sliced baguette on a dry grill pan for a few minutes until grill marks appear.
    4. Turn and repeat on the second side.

    1. Spread room temperature goat cheese on the crostini and spoon your fabulous balsamic roasted strawberries over the crostini.
    2. Thinly slice a few leaves of basil, chiffonade if you are fancy, and garnish for another layer of flavor.
